Now that we are in the heart of Spring, many don’t think about oatmeal for breakfast. It tends to be a winter comfort food. To my pleasant surprise, overnight oats are absolutely delicious cold!

There are so many awesome combinations for overnight oats. And it’s so fun exploring all the different possibilities. Overnight oats are so different from the old fashioned oats I grew up eating. I never would have considered adding sources of protein like chia seeds, ground flax seeds, or hemp hearts. But what a game changer with the added protein and fiber.

Love the multitude of nut butters out there from natural peanut butter, almond butter, cashew butter, to sunflower seed butter. Most nut butters offer smooth or crunch – have to admit I like the crunchy! They certainly add an indulgent flavor with a nutritional punch!

These Almond & Apple Overnight Oats have just the right balance of sweet and tart with the granny smith apple, adding a nice burst of flavor to each biteful. I used a peeler for apple ribbons floating through the mason jar. Give them a try for your next overnight oats and you will be hooked!
