I started making this salmon about 14 years ago. I made it whenever my dad came to visit – when he was working in Philly. My mom did not care for fish and did not like her kitchen smelling fishy. LOL So we snuck this meal in when she wasn’t along for the trip. This was my dad’s absolute favorite meal of mine. I remember the first version I prepared – it was way overcomplicated and literally took me hours – because of the time-consuming sides that went with it. Now – it’s literally a 22-minute meal! Surprisingly, it quickly became my kiddos favorite meal too. To this day, it has evolved into an all-season staple of a dish.

Who doesn’t love just a bit of a crispy factor when it comes to salmon? The brown rice coating does the job. When I officially went gluten free, years ago, I made the change. Best part, everyone loves it this way!

In the video, you will hear me talk about using wild caught vs. farm raised salmon. I encourage you to purchase wild caught if it works for your budget. In this situation, I did go with the farm raised at my local grocery store. You are still getting many health benefits with the farm raised but here are some factors to consider. Overall if going with farm raised, you may want to limit the frequency of consumption. Unfortunately prices have become a bit out of this world.

  • Farm raised fish are fed processed fish feed.
    • Can be possible contaminants such as PCB’s & dioxins.(1)
    • Higher Omega 6 Count (need to have a balance of Omega 3 to counter high Omega 6 – which can lead to cardiovascular health risks)
  • Wild caught salmon feed on organisms found in their natural environment.
    • Has higher nutritional quality – especially calcium & iron.(2)

This dish goes nicely with roasted veggies and a high-quality complex carbohydrate such as sweet potato or whipped parsnips. It’s quite truly a homerun of a meal!
