Peanut Butter Pumpkin Protein Bars

Skip the protein bar aisle on your next trip to the market. These are dangerously simple! I have made the protein balls and have at least three kinds on my website. But I never made the bars, until now! I have to admit, the balls take longer since you have to roll them out. The bars, well, easy peasey. You will see in the video how these came together in under 10 minutes. There are some wonderful superfoods in this recipe. From the pumpkin seeds to the cacao nibs to the chia seeds, you are looking at some major fiber and protein and bonus antioxidants (helps you fight those free radicals).

Warning: Due to the indulgent nature and natural sweetness of these bars, they can be slightly addictive. I call out several times in the video to watch your portions. The pumpkin seeds are the star ingredient of this recipe. Check out all the health benefits.

Here are a few cooking tips to know:

  • You can customize the type of seeds used. Feel free to replace chia and flax seeds with hemp seeds or organic sunflower seeds.
  • Diversify your add-in ingredients. Swap out the peanut butter for almond butter, sunflower seed butter or cashew butter. Add in chopped almonds, walnuts, or cashews. Get healthy creative!
  • Modify the “sweetener”. Try using monk fruit rather than coconut sugar. Use pure maple syrup or honey in place of the dates.
