Sweet Potato & Pepper Hash

This is one of those recipes that I have quite honestly never tried making before. Being in the kitchen puts me in my happy place and it allows me to get crafty. Cooking and creating new recipes gives me pure joy and sharing these recipes with you is the icing on the cake.

Sweet potatoes definitely have a bit of indulgent flavor to them especially when roasted in the oven. The onion caramelized so nicely and just brings out the sweetness in this sweet potato hash. Word of advice, watch your portions on this delicious side dish. Yes, it tastes that good!

This is one of those perfect side dishes that can transform every meal throughout your day. Imagine an egg over medium on top of this hash with some lovely avocado? Or how about sprinkled over an awesome harvest salad? You can have this as a side dish with your favorite oven roasted chicken dinner too.

Here are a few cooking tips to know:

  • Keep the skins ON!!! Retain all the nutrient benefits you can!
  • Diversify your add-in ingredients. I used an orange pepper. You can do any color pepper desired. You can also consider adding other veggies to this dish such as kale.
  • Be sure and set a timer and stir every 12-15 minutes to prevent burning.

    

I love how versatile this sweet potato hash is. Nothing better than a dish that can be used for any meal throughout your day.  The nutritional benefits of sweet potatoes are through the roof making this dish an all-around homerun. Here are some of my other meals you can consider adding this to – egg & veggie muffin cups, kale salad, fast baked chicken, crispy garlic shrimp, pulled pork, etc.
