Creamy Vegan Tomato Soup

If you live in the Northeast or Mid-Atlantic area, you got hit with some major snow this past weekend. And what happens when we get snowed in? We want comfort food that is warming to the soul! There are so many wonderful comfort foods that are still considered healthy. One of my most favorite things to do is take a meal that I used to love and turn it into something nutrient dense. The challenge comes in when making it compliant with my anti-inflammatory eating approach. Yes, a challenge but totally doable!

This recipe really brings me back to my childhood days. Having that Campbell’s cream of tomato soup. The best was having a grilled cheese sandwich loaded with Swiss cheese. OMG! I needed to make a way to recreate this soup – with anti-inflammatory ingredients of course.

For your education, I wanted to share what’s in that canned soup version. Unfortunately wheat flour is the 3rd ingredient and sugar is the 4th. OK, why wheat in tomato soup? Likely to serve as a thickening agent. And for the sugar, it cuts down the acidity from the tomatoes. But there is a lot of sugar – 12 grams in one serving. If you have the entire can, you are looking at 24 grams of sugar – which would be your daily recommended amount. (3) .

 

My creamy vegan tomato soup is gluten and dairy free and packed with flavor. It also provides that comfort factor.

Here are a few nutritional tips to know:

  • I used maple syrup in place of sugar to help cut down the acid from the tomatoes.
  • There is a total of approximately 17 grams of “added” sugar from the maple syrup. If you divide that by 6 servings, you are looking at under 3 grams of added sugar per serving.
  • Maple syrup is also lower on the glycemic index not spiking your blood sugar like cane sugar does.
  • Red onion has a natural sweetness to it – sneaky trick!

There are some great ways to garnish your soup. I did gluten free croutons (used my toaster oven for them). Done in 5 minutes! You can add a dollop of coconut cream, like I did. You can also top with pumpkin seeds, fresh basil, and even add more nutritional yeast. Serve with a lovely side of steamed veggies or salad and you have a nutrient dense meal.
