 Like my quote???!!! Well this has a lot to do with our recipe today. Back in the day, I would eat cheese literally in every meal. In my eggs, on my sandwiches and covered all over dinner’s main course.

A pivot definitely had to happen when I decided to implement the Anti-Inflammatory Way. I found out 21 years ago that dairy was causing havoc on my body and wildly contributing to my inflammation. So I had to make a big change or if you will, pivot.

What I loved the most about dairy was it’s creamy and delicious texture. That flavor put me in my temporary bliss zone. So I was on a mission to finding modifications that would provide a similar “taste” experience. And since then, I have had fun modifying my fav recipes. There are so many incredible ways to recreate the flavor magic. This recipe can be used in so many diverse ways. Use it as a dip for veggies or organic tortilla chips, as your cheese in quesadillas, poured over a burrito, or in a Mexican layer dip.
