Blueberry Almond Protein Waffles
This recipe calls for some great quality ingredients! Both blueberries and almonds offer such great health benefits. We are going to call out those blueberries in today’s newsletter. Since it is Spring and all, berries will start to become more available as we get closer to Summer. Would you believe me if I told you that I never liked berries (as in all of them) until I was in my mid 30’s? I quite honestly was always more of a veggie lover. To me, berries were squishy and I just didn’t like the texture.
What turned me on to them? Our daughter! She loved all berries, and all fruit as a baby. She kind of gavoned them. LOL I was like, “well if this little tiny human thinks they are good, maybe it’s time I give them a try – again”. The thing I didn’t know back then was how and when to eat berries. Especially strawberries! They have more flavor when you let them sit on the counter a bit. Now I love blueberries and strawberries and starting to like raspberries more.
It’s important to eat your berries organic too! The conventional version are highly sprayed with pesticides and can cause inflammation. The key to buying fresh berries is to watch them closely. When they give you an inkling of turning, you can rinse and dry them, then freeze them for a smoothie or other purpose.
In this recipe, I used frozen blueberries. They thaw out pretty quickly in the waffle iron and even when placed on top of the waffle.
If you didn’t know, many times when creating these recipes, I am literally creating when recording the videos. From time to time, I have to make some tweaks. This one needed a tweak. I decided after cooking the first batch, that it needed a quality fat for texture. In the video, I did not include the ghee. It is in the recipe and on the shopping list. I also added a pic of almond milk since it’s not shown in this photo.
