Chia Seed Pudding
I can’t help but to chuckle every time I say “chia”. It always takes me back to those commercials in the 80’s trying to sell us those chia pets, “as seen on tv”. Don’t forget to send money by check or money order. Who would have thought that chia seeds would become so mainstream in the health food world as they are today?
Chia Seed Pudding checks all the boxes on anyone’s healthy wish list. We are a nation significantly lacking in daily fiber consumption. Chia seeds can significantly provide a daily boost in fiber. Chia also provides a great source of vegan protein as well. It tends to keep us fuller longer because of these two qualities and isn’t that what we are aiming for?
This recipe has a video to go with it. Recorded early on in my health coaching business. It cracks me up – I would say my cooking videos have certainly progressed over time. LOL I am liking that old hair cut though, may have to give that a try again.
