Sometimes, some chocolate goodness just has to happen! And gooey chocolate makes it even better… I have always loved decadently gooey desserts and love that from time to time, I can still indulge in them.

These cookies were such the perfect treat and pretty darn healthy. I may try them with coconut oil the next time to see how it changes the flavor. The family approved and that is the true telling sign of a winner recipe.

Our daughter said they are like a brownie cookie. So I figured, why not make a mini brownie sundae with one. 😉 I warmed one up for about 8 seconds and then topped with a scoop of my favorite vegan vanilla ice cream. The chocolate chips were so gooey, so no hot fudge sauce required.

Recipes have to be simple and delicious in my book and to eventually land in my cookbook. My next venture will be to start compiling a cookbook with all my favorite recipes. I will keep you posted on my progress!
