Hearts of Palm Chicken Sausage

My mission is to stay current with health trends by constantly researching via podcasts and following my favorite functional medicine doctors. One food item I kept seeing and hearing about was “hearts of palm”. So I decided to give this a try and see what all the hype is about.

They have been tauted as a low carb and low calorie pasta subsititute. And that is 100% the truth. I spotted them at Trader Joe’s and had to give it a try. I am a pasta lover, through and through. There is only 60 calories in an entire package of these. Wild right? And only 13 carbs in the same package.

Super fast to prepare – done in literally 5 minutes. I know you could use something like this in your life and that’s why I created this recipe. Most grocery stores are carrying hearts of palm. What is it exactly? It’s a white vegetable derived from the center of a palm tree.

The sauce with ground chicken sausage was the perfect compliment to this faux past dish! If you are looking to cut back on carbs and grains, amp up fiber and cut out some calories, hearts of palm should be on your next meal plan! Can’t wait to hear how this recipe turns out for you.
