Ok, so I just wrapped up my July vacation and it was refreshing, rejuvenating and much needed. I really took my own advice – disconnected from social media, enjoyed the moment and truly felt relaxed. Bottom line, we need this to be in our lives on the regular. We live in such a high stress, go-go-go society and so many feel the need to be constantly busy (from the demands of our society). My take – just say “no”! As hard as it is, we have to take a step back and see how this is affecting our mental health and everything else in between.

My vaca did involve some beach time but I got to do the other things I love as well. I did get the opportunity to experiment in the kitchen a bit and am excited about some new recipes to share with you. ☺ Cooking is my happy place and I find so much joy from trying new ways to prepare clean, delicious and nutrient dense food. I was on the fence about sharing my new chocolate cookies or my new amazing brussels sprouts. Well – the sprouts won this week but not to worry – next week you will get my latest gluten, dairy free and vegan chocolate cookies. Oh yes, these were my vaca treat!

Moving on – darn those cookies are so distracting! These brussels sprouts have insane flavor – the combo of pancetta and the balsamic glaze give them such a flavor boost! So simple to prepare and can be pulled into so many meals – plus can be prepared for any time of the year.

Be sure and give these a try this summer! I was told they were restaurant worthy. Give them a try and be sure to let me know how they turn out!
