Cooking Lessons – Sharing My Passion to Make Food Taste Good!

              

I would love to emphatically say that every meal I make is absolutely amazing but there have been many fails along the way. It’s almost the challenge I love – have to keep trying until I get it right. And now with my mission of creating autoimmune friendly recipes – that challenge has been jacked up a few notches.

I still love dairy and all gluten containing foods – especially pizza, ice cream and everything in between. So why not find ways to recreate these foods and make them autoimmune friendly?

This Christmas was full of all types of fun kitchen gadgetry. Most women would be pretty upset to receive a coffee maker or air fryer for Christmas. They want pretty things like jewelry. Not this girl! I have been having so much fun with our new coffee brewer – making dairy free latte’s using coconut milk, oat milk – using some cinnamon and vanilla to fancy them up. I will have to post some recipes soon and videos!

I also have been having fun figuring out the air fryer / pressure cooker. I never had either and it’s interesting since I feel a bit slow on the uptake. The first batch of fresh cut French fries (kids request) were a total fail – turned into mush (I have been more successful with the conventional oven). Although the sweet potato fries came out pretty darn good. The biggest hit so far – at least in my opinion were the brussels sprouts in the air fryer – ridiculously tasty! 1 TBSP of extra virgin olive oil and about 12-15 minutes in the air fryer – YUM! We also did a healthier version of chicken wings – family wanted to try out and they came out pretty good. I also did a shrimp dish that was really delicious. Excited to try more recipes soon!

My final kitchen gadget was an ice cream maker – oh yes – this girl still has her ice cream even if it is dairy free. It seems that most brands out there have a lot of junk ingredients though – so I figured if I could make tasty homemade coconut yogurt, I can figure out how to make some pretty darn good ice cream. The jury is still out – I have not opened the box – hoping that will happen over the weekend. And I will be making the kids ice cream as well – we will start crafting our own recipes.

So, where does my love for cooking come from? Well – if you know me at all – that’s simple, my mom. She was an amazing cook. Italian dishes were her specialty. She had a homemade dinner on the table almost every night when I was growing up and it was always tasty. Funny because as I got older and really took to cooking, she couldn’t understand why I said she is the one that got me started. Over the years, I have definitely modified a lot of her recipes tweaking them and making them healthier. Long gone are the heavy Italian pasta dinners for me but I have really enjoyed exploring and trying so many other foods. Still so many to seek out!

I do know that cooking can be a major burden to many people. I’ll admit, it’s much easier to just hit the drive-through or pop into the Chipotle for a quick meal. And some nights, that is just how things go although I do all that I can to avoid it. My kids have not been to McDonald’s in many, many years and they don’t miss it. I love that it grosses them out as much as it grosses me out.

My main point in this blog – give cooking a try again – if you have tried before and didn’t have much success, go back to basics. Creating a healthy meal for your family has so many benefits along with self-satisfaction. It does not have to be hard or over-complicated. Due to time constraints, most of my recipes are pretty simplistic. Also, for the sake of time, I will take one meal and spin leftovers into a different meal for the following night. I recently posted on social media about holding Cooking Lessons. So happy with the overwhelming positive response! I am going to pursue holding some test lessons and put a plan together. Would be such a fun time and great way to build on making some simple, healthy recipes. Nothing is better than getting to share my passion with others. And to show them truly how easy and rewarding cooking can be!
