I can’t recall the last time I had a waffle! So it dawned on me, why not use my Cassava Pancake batter for waffles? Worst case scenario, they will make a big, gloppy mess.

We are currently in the midst of my “Clean Eating for the Busy Person” program and the meal options are endless. I love that this is something on the “yes” list. I do need to improve my breakfast variety a bit and figured that a Sunday would be the perfect day to try out a Belgian Waffle recipe.

Check out my ancient Oster waffle iron – it’s over 22 years old now but still going strong! Works like a champ!

This recipe is super easy and it’s awesome that Cassava flour can now be found at most grocery markets. These really bring me back to when I was just a kid, and my mom would make us all waffles. I  recipes that bring back such great memories! Although, I do have to confess, I did NOT eat strawberries back then. Not until my early 30’s did I start adding them to my diet. Thanks to our daughter Kate.

No gloppy messes here! The waffles came out great. If you leave them in the waffle iron long enough, they will get crispy on the outside and slightly chewy on the inside. The strawberries add a great source of Vitamin C and fiber too. The coconut whipped cream was a last-minute decision but the perfect finisher. I also drizzled a bit of organic maple syrup.

Clean eating is extremely tasty without the deprivation! There are so many ways to slightly modify your favorite meals to make them cleaner and more nutrient dense. These waffles are a great addition for changing up the usual breakfast routine. It’s like eating out but staying home to do it! The whole family will be happy!!!
