Vanilla Coconut Ice Cream

I actually decided to take a break from my weekend treat of having a dish of this splendid dessert. Unfortunately and fortunately, sugar affects me in not great ways. Why do I say “fortunately” you wonder? Because it causes inflammation, and I should be limiting it to begin with! So, I really have been aiming to cut down my weekend indulgences. Will I be giving it up completely? Heck no! And what better time to try this then on my birthday!

I have tried making ice cream before in an ice cream maker machine. It was very tasty, but this is a whole other level! And can you believe it’s dairy free, vegan?

Crazy how many ways there are for making homemade ice cream. I love making my own, because I know the whole food ingredients going in, without all the other inflammatory ingredients. For this recipe, I used both organic maple syrup (lower GI than can sugar) and used some monk fruit sweetener. Monk fruit shows up as “0” on the glycemic index & does not spike blood sugar .

Here are a few tips on preparing this recipe.

  • Upon ice cubes being frozen (minimum 4 hours) begin blending on the lowest setting of your Vitamix
  • Add the remaining coconut milk liquid from 2nd can – a little at a time.
  • Continue using the tamper to push down the mixture until you have it at desired consistency.
  • Once everything is combined and ice cream is smooth, increase the speed of your blender until you achieve the right consistency.
  • You can either eat right from the blender into your bowl or freeze in portions for another time. If opting to freeze, I recommend using within 1.5 weeks.

 

 Here’s the tricky part. Portion Control!  This recipe makes about 4-5 portions. While coconut milk has many benefits, stay aware of your portion size since it is higher in calories. Don’t forget – fats don’t make you fat! Your body needs fat (and this is the good kind) – just enjoy!
