I am always super surprised when I discover yet another one of my staple recipes that has not been shared with you all. Back story on this one is about 8-10 years ago. We had reconnected with some college friends at the beach and were talking about the challenges of parenting. Putting a healthy meal on the table each night became front and center of that conversation. So we started sharing our go-to recipes. We also talked about our love for the crockpot – the Instant Pot and air fryers were not a thing yet. Gosh that is dating us a bit here. LOL
My methods for cooking have evolved from complicated to more simple (less time-consuming) over time. And the suggested crock pot meal she made was in one word, genius to me. She said all you need is a pack of chicken breasts and a jar of salsa. Throw it all in a crockpot and let it do its thing. Did I say, “Pure Genius”?
Today’s recipe is my take on this “go-to” recipe. I added a few spices to give it more of a kick. Otherwise, it’s beyond basic, simple yet tasty!
And don’t forget how many dishes you can spin this into. Some suggestions include chicken tacos (soft or hard shell), chicken taco salad, burritos, chicken taco bowl (think roasted veggies, fried rice or quinoa, avocado and shredded chicken salsa), quesadilla’s, etc. With this meal, I sauteed peppers and onions to add more flavor and of course fiber.
