Over the weekend, I realized that baking has been off the table for quite some time. We recently closed out my 28 Day Whole Foods Reset and I was looking to create a fun and low sugar treat. After not having sugar for a while, I tend to be sensitive to sweets. While I have been wanting to try something of chocolate proportions, a new idea popped into my head. I still have not mastered a brownie recipe – this one continues to be in the works. I am super particular about getting it just right and that gets tricky when it has to be gluten and dairy free.
Sooooo -low and behold, I opted to create the opposite of a brownie – and this was still a decadent treat without all the chocolate. This Best Blondie recipe came out just right – not too heavy and not overly sweet. Rather than using straight up cane sugar, I opted to use monk fruit sugar and coconut sugar. If looking for something a bit more indulgent without overdoing it, this is a great option. Also awesome for those days we can entertain again or for bringing to a party.
These Best Blondies are gluten and dairy free and insanely fast and simple to pull together. No crazy ingredients to find at the store. Most stores carry monk fruit sugar along with coconut sugar in the baking aisle. Using these 2 types of sugar will help reduce the chances of blood sugar from spiking – considering their low glycemic index.
One last tip, make sure they are completely cooled before cutting into them. I know how hard this can be…. Use a plastic knife when slicing them so they don’t crumble apart. And if you are feeling super indulgent, enjoy a scoop of Coconut Bliss Madagascar Vanilla ice cream on top!
