Wait, did you ask, I can do the AUTO Friendly Method, Solving Inflammation way of eating and still have Chicken Parmesan? Well – my answer is a shout back saying – YES! – YES YOU CAN!!! If there is a will, there is a way. The food (for me ☺) is one of the most fun components of my job! I love creating and crafting recipes that are nutritious & delicious! Bonus, there is usually a way to incorporate your indulgent favorite foods into the AUTO program.

I like to approach it with – “if there is a will, there is a way” mindset. When you repeat over and over to yourself, there must be a healthier way I can have my favorite foods, that’s where I come in to help save the foodie day. Modifications can typically almost always be done to “healthify” a recipe.

I still love my Italian food! And I may not eat the heavier dishes I grew up on, but with a few tweaks here and there, I can still have my Italian too. I am pretty picky about using vegan cheeses, as many of them are loaded with junk-filled ingredients. The one I used for this recipe is pretty tasty and one of the cleanest parmesan cheeses I can find. You can also opt for the Miyoko’s mozzarella cheese round or just use nutritional yeast. Also have the option of leaving cheese out all together. Your call! In my book, the more options, the better!

This was actually a last minute pull together dinner. My son asked for chicken parm – I just baked our chicken in different pans – gave them regular cheese and used vegan cheese for mine. Easy peasy!
