Summer 2020 has officially arrived! How did your New Year’s resolution go? It’s definitely been a rough one but allow me to help you transition into Summer in the healthiest way possible. All we can do is move forward now – no regrets. Remember that you have the power and control to make this a healthy Summer.

Obviously Covid-19 derailed many wonderful intentions going into this year. 2020 was supposed to be your year in many ways. Who would have predicted a pandemic in this day and time? The damage has been done. The processed foods industry is in the black by a much larger margin. Their sales are up 30% since the virus arrived in the states. So many people resorted to calorie dense, processed comfort foods to help console all of the fear and worry during the initial stages of the pandemic’s arrival.

It’s time to reign it back in! And you can do it! Being overweight also contributes to the morbidity factor with this virus. Let’s reduce your risk of having a harsh outcome if and when you contract the virus. The healthier you are, the more likely you are to have a less severe outcome.

Check out these tips and tricks to help you navigate all the summer temptations.

  • Summer tends to be a season of indulgent foods – think cookouts, ice cream, potato salad, ribs, etc. More alcohol is typically consumed which does not help in making sound food decisions.
    • Cookout Alternatives:
      • Chicken sausage and veggie kabobs (recipe coming soon to my site). Skewer them up (chicken sausage is already pre-cooked). Aim for organic – the less ingredients the better. Load them with your favorite veggies and healthy marinade. Serve with quinoa, brown rice, or a sweet potato. Your guests will thank you for a light and healthy meal!
      • Grilled chicken salads – Have all the mix-ins for a delicious salad for your guest to customize their salad. Spring mix lettuce, arugula, baby bok choy, spinach, cucumbers, tomatoes, peppers, pumpkin seeds, various cheeses, fresh strawberries, chickpeas, etc.
      • Healthy sides to serve: Broccoli Salad, Quinoa & Veggie Chop Salad, Veggies with Avocado Hummus, Eggplant Dip, Grilled Veggies (options are endless!)
      • Healthier Chip Options: Late July Brand – lots of great flavors | Siete Chips – love the lime flavored chips.
      • Burgers: Veggie Burger – Amazing or Beyond (Beyond is the least offender considering ingredients but would eat sparingly). Healthier options include Dr. Praeger’s Brand and Amy’s Organics Brand or your very own homemade veggie burger.
    • Desserts:
      • Should you skip the boardwalk ice cream during your vacation? Heck no! But you can be choosey on which one you eat. The custards of the world – like Kohr’s Bros. is lighter in calories and a better option. Most of your soft serve ice creams will be the better, lower calorie option. They are less dense and more airy.
      • What to serve or bring to a cookout? Fruit kabobs with a yummy coconut peanut butter whipped cream dip. Recipe coming soon! Or perhaps grill your fruit – really brings out the flavors in your fruit when grilled. You can always core and bake an apple and drizzle with 1 teaspoon maple syrup, sprinkled cinnamon, and dollop of coconut whipped cream. So many great fruity options!
    • Stay Active! This is the perfect time to be outdoors and maximizing your movement. We have been cooped up all winter (and a chilly Spring) – get outside for a walk, bike ride, hike, jog, play games with your kids….
