Cooking for more family during the Summer months means more recipe experimentation. We are all now officially working in this house, so time gets a little tricky. So – fast, easy, healthy recipes are a MUST!

Thankfully, we are all on the same page about eating healthy food – no room for picky eaters. House rule is “eat what I make or don’t eat” (or make your own 😊). While I will modify certain recipes, I am not up for making two completely separate meals. Who has time for that? Certainly not this mompreneur.

My main goal at the beginning of each week is to menu plan for the upcoming week. You can hear my sigh of relief all the way over at the left coast when this happens. The worst question to ask myself on the daily is, “what’s for dinner tonight?”. Many moons ago, I actually started a blog site called whats4dinner2nite. The struggle is real for all of us. The dinner cooking commitment is not going away, so all we can do is make the most of it. Taking the right perspective is key!

  • “How fortunate am I that I get to cook dinner for my family?”
  • “Another opportunity to impress the family with an amazing new recipe?”
  • “Thankfully, I am healthy enough to prepare dinner again!”

Did you slightly roll your eyes reading this? Ok – well it doesn’t always go according to the above plan. And yes –  there are those days when negative Nelly (aka me) slips in and the dinner cooking, dreaded question pops up. So, it’s called improvise and work with what you have in the house. Always aiming for as healthy as possible. Never aiming for perfection!

This leads me to my latest recipe creation – Lemon Basil Chicken. My brother and I created this together so I certainly can not take all the credit. We had chicken but wanted a different twist than the usual grilled version, baked version, bread crumb version. Rather than using regular white (gluten) flour, we used Cassava flour and it worked beautifully. The outer coating was a delightful golden color with an ever so light lemony flavor. The fresh sliced basil was the perfect finishing touch. It turned out perfectly tender.

We served organic baby bok choy, baby spinach and a quinoa/brown rice mixture with the chicken. Bonus about this dinner – done in less than 30 minutes. BOOM! Mission accomplished!

Lemon Basil Chicken

Ingredients:

  • 1 ½ – 2 lbs. Organic Chicken Breast – Cut into Half or Thirds
  • 3-4 TBSP Extra Virgin Olive Oil
  • ¾ Cup Cassava Flour (or any other Gluten Free flour)
  • 1 Teaspoon Himalayan Sea Salt
  • ¼ Teaspoon Black Pepper
  • 1 Teaspoon Dried Basil
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Thyme
  • 1 Teaspoon Cumin
  • 1 Teaspoon Dried Parsley
  • 4-5 TBSP Fresh Squeezed Lemon Juice
  • 2 Eggs with ½ Cup Water
  • 2 TBSP Fresh Basil Sliced Thin Long-Ways (Optional for Topping)

Instructions:

  1. On a dinner size plate add the flour, salt, pepper, dried basil, garlic powder, onion powder, thyme, cumin, and parsley. Mix with spoon until combined.
  2. In a medium size bowl, add eggs and water – scramble lightly.
  3. Tenderize chicken lightly by placing in Ziploc/cover with paper towel and pound with tenderizer.
  4. Place chicken in egg bowl – completely immersing. Then roll in flour mixture – covering all sides.
  5. In a large sauté pan add the extra virgin olive oil. Warm on medium until get slight sizzle.
  6. Slowly add the battered chicken to pan. Cook until golden about 6-8 minutes and then turn over.
  7. Immediately drizzle lemon juice over all chicken. Cook another 6-8 minutes and cooked through to 165 F. Let sit 5-10 minutes before slicing.
  8. Serve with roasted or steamed broccoli, brown rice, gluten free pasta or a sweet potato.

TIP: Add broth rather than more oil to the pan. Will save you lots of calories.

*Try and use all organic ingredients if possible.
