Meals can get tricky in our house some days. Between 2 teenagers (one that is pescatarian – and one that can be slightly picky), a mom who is gluten/dairy free – well let’s just say putting a meal on the table that accommodates everyone is a small feat each night. Thankful my hubby will eat anything I make! With a few tweaks & modifications, it CAN BE DONE!
I do like to ask my kids for requested meals and then I can mold a menu for the week around their top choices. I also can figure out how to make those needed modifications. So this newest recipe is just that!
My kids love Chipotle so of course my son asked for burritos – which I have never really made. And so here you have my clean take on a pulled pork burrito. The base of this recipe is from My Organic Pulled Pork Tacos. I added chili powder along with all the other burrito fillers and fix-ins.
For the vegetarian version, I omitted the pork and added sauteed peppers/onions, protein rice, black beans, spinach/kale and organic Mexican cheese.

Crockpot meals are the best! Nothing more satisfying than knowing dinner is cooking all day long with minimal effort. Plus, this leaves a delightful amount of leftovers.
The kids had regular cheese and I ended up trying out a new vegan cheese. Violife – Was pretty good!
You can opt to roll these up “as is” or bake them in the oven. I wanted to bake mine in the oven but totally your call! That’s the beauty of cooking – make it your own!

This recipe can be morphed into so many different meals. From these burritos to tacos, a salad, quesadillas, and even a creative roasted veggie bowl with pulled pork – the creations are endless.
