Cravings are a funny thing right? After a phone conversation with a dear friend, I was inspired to make these zucchini fries. She was having them with her dinner and I knew I had at least 3 medium-sized zucchini in my refrigerator.

Back in the day, I used to love getting the zucchini fries at Red Robin. So tasty – I could just eat them as a meal. There was also an Italian restaurant that had them in a chip version. They were my go to appetizer!

And I love a cooking creation challenge being gluten and dairy free! So I crafted my own, healthier version thanks to the air fryer. I left out the traditional flour step. I did not want too many breadcrumbs or added carbs and quite honestly, they really didn’t need it. These were light and crunchy on the outside and absolutely delicious. The vegan ranch dressing was the perfect finish to these zucchini fries. My husband and I were fighting over them.

These are great to serve as a side dish or as a healthy appetizer when entertaining. Even the kids will love them!
