If you take a close look at this recipe, it’s pretty basic ingredients. One of the biggest misconceptions with eating healthy and “clean” is that it’s too hard and time consuming to prepare the food. I would have to disagree with that statement. My past go to’s included lasagna, chicken parmesan, meatballs and sauce from scratch. While yes, all are delicious – they are lackluster when it comes to nutrition. They also entailed hours in the kitchen. Clean and whole foods based recipes are much faster and simplistic to prepare.
Some nights, I don’t want the meat and this is a great alternative. Plus with my daughter not eating meat, she inspires me to scale back on it. I have been programmed in the past thinking that every meal had to have an animal based protein source. Now there are many days when I go without animal protein all together. And I feel great, completely satisfied and lighter for that matter.
You can take this recipe and modify according to what you have in the house. Other veggies that would make great alternatives include mushrooms, broccoli, cauliflower and kale – so many awesome options.
Try out my faux sriracha sauce as a topper to kick up the flavor a notch! And don’t forget to add some avocado. Yummy, delicious & nutritious!
