Healthy & Fast are kind of my motto when it comes to dinner meals. I would say most of you would agree with that philosophy. As much as I love cooking, our schedules are becoming more and more demanding. And for a healthy meal to be appealing – it has to come together quickly. You want the idea of cooking to be inviting to your mind – not a deterrent.
This recipe is inspired by a client as I must confess, I have never prepared chicken thighs before. I have always stayed away from the dark meat of chicken but not sure why. This is super tender with lots of flavor. Best part is it requires minimal ingredients.
I am all about a one pan kind of meal. And this one can be modified in so many ways dependent on what you have in your fridge or pantry. For my recipe I used a can of quartered artichokes and black magic kale from the Grower’s Market. You could also consider doing kalamata olives, sun dried tomatoes, portabella mushrooms, spinach, baby bok choy, etc. The options are unlimited!
This is also a great meal to make the week of Thanksgiving. Since many will be prepping for the big Turkey Meal – this is a super fast recipe that definitely qualifies as healthy. As for sides to serve, I made a baked sweet potato. You can also serve this dish over a chickpea pasta, brown rice, millet, quinoa or maybe even mashed parsnips. Roasted potatoes would also be a delicious option.
