Ingredients:
- 2 12 oz. Bags Frozen Organic Raspberries
- 1 ¼ Cups Organic Coconut Cream (reserve ¼ cup)
- 4-6 TBSP Organic Maple Syrup
- 1 teaspoon Pure Vanilla Extract
- 1 ¼ teaspoon Lemon Juice
- ½ teaspoon Cardamom
Equipment:
- Vitamix or 64 oz. High-Capacity Blender/Food Processor
- Tamper for Vitamix (comes with machine)
- Glass container with lid for storage.
Instructions:
- Add all the raspberries to Vitamix. Next add 1 cup of the coconut cream.
- Add all remaining ingredients – maple syrup, vanilla, lemon juice, and cardamom.
- Blend on the lowest speed while using the tamper device that comes with the Vitamix. Keep pushing the mixture down and allow to blend on the lowest setting (don’t go higher) for about 1 minute. If more coconut cream is needed, add in the remaining ¼ cup. Continue blending another 30 seconds (give or take) until you reach the desired smooth and silky consistency.
- Can serve immediately or store in the freezer for a few weeks. When frozen solid, allow to sit on counter about 10-15 minutes before serving
