So funny, because I never even gave a thought to parsnips before Thanksgiving 2019. To be 100% honest, I never even knew what they were. Well, my aunt brought whipped parsnips to our holiday dinner and I was over the moon in love with them.
For a year now, I have been saying – “I want to make those whipped parsnips” but I never did. Finally, I found them at my local grocery store (Giant). They were in a plastic bag – 1 pound per bag – so I bought two of them.
Parsnips are a root vegetable – similar look to a carrot but it’s white in color. This was insanely easy and the taste was decadent – 5 ingredients and done! Be sure to have a blender on hand. I used my Nutribullet (larger cup). You would not know they were dairy free either. Thank you coconut milk! They have a sweet, savory and rich flavor.
They are an awesome replacement for mashed potatoes with way more nutrient dense benefits!
I served mine with a turkey sausage and black magic kale blend along with some pan steamed asparagus. Felt like such an indulgent meal – the essence of comfort food without the guilt!
